Do you like cooking at home for your friends? Good -- you should definitely keep doing that, but you’ll need a bit more focus to be a line cook. You’ll be preparing dishes in a consistent manner - the same ones many times throughout your shift - by prepping ingredients and assembling dishes according to precise specifications. It’s a great stepping stone to a culinary career, but keep in mind kitchens can be hot, stressful, and noisy. You’ll be on your feet for long periods of time and must adhere to safety regulations for both food sanitation and the general workplace.
If you are a person that works quickly and efficiently under pressure and is known as a “can-do” person that is a good start. You should consider every dish to be a reflection of your passion. You’d never take a shortcut on quality in the interests of speed – and you pay attention to the details. The facts of life in a restaurant is that we work when everyone else is playing, so be prepared to work nights, weekends, and holidays. Be able to reach, lift, bend, climb, and stoop and carry up to 50 lbs. Be able to stand for long periods of time and practice good skills regarding repetitive motion.
